THE SOLUTION

In 2023, not being able to serve a Last Word felt wrong in a proper cocktail bar. There was no reliable substitute for one essential herbal liqueur—so when bottles became scarce, we had a choice: accept it, or find a way to keep making the drinks we love.

Derek Reno, our longtime Beverage Director, chose the latter. He spent long nights experimenting, determined to craft a house-made liqueur with the same depth and complexity. His only goal? To ensure we could still serve this classic cocktail the way it was meant to be enjoyed.

That effort led to something unexpected. What started as a behind-the-bar solution became a bottled herbal liqueur we never intended to share, but the response from our guests made it clear: this was something worth putting in your hands, too.

Why the shortage? The original liqueur, long made in small batches using a closely guarded recipe of over 130 botanicals, saw a sharp drop in availability due to changes in production philosophy. As demand grew, supply did not, and shelves everywhere started to empty.

That scarcity inspired something new: our own take on a timeless ingredient. And now, whether you’re mixing a Last Word at home or sipping one at our bar, this modern herbal liqueur is here to help keep the tradition alive.
