Genever is a malt whiskey enhanced with botanicals. Popular in the pre-prohibition United States, it was imported from western Europe 4:1 over its younger cousin, gin, and was the spirit used to develop most cocktails that we now make with that relative.

Extremely flexible, it can stand as a replacement for both gin and whiskey. Echo Spirits Genever is low on juniper and very approachable.

Stir ingredients with ice. Strain into a chilled cocktail glass. Garnish with an orange twist.

Rinse a coupe glass with absinthe and knock it back (don't be wasteful). Mix remaining ingredients in a shaker with ice and shake well. Strain into glass and garnish with a lemon peel.

0.5 oz      Honey Syrup

1 dash      Angostura Bitters

0.25 oz    Maple Syrup

Prepare the honey syrup with equal parts honey and water, heated to blend.

Combine ingredients in a pot. Heat over the stove until mixture is warm (don't boil). Pour into a heat-safe glass and garnish with a cinnamon stick.

Snuggle your face down into the glass and take a few deep breaths.
