The Late May Strawberry-Rhubarb Daiquiri

1.5oz    Echo Spirits Silver Rum
0.75oz   lime juice
0.75oz   strawberry press syrup
0.75oz   rhubarb simple syrup

This one is worth the effort for the sub-recipes. Add all ingredients to a shaker tin with ice and shake. Strain into a coupe and garnish with a peel of rhubarb.

Strawberry Press Syrup
Combine 8oz strawberry slices with half a cup of sugar in a resealable bag. Squeeze until strawberries begin to juice. Leave in the fridge overnight, squeezing periodically. Strain out solids.

Rhubarb Simple Syrup
2 cups water
3 cups chopped rhubarb
1.75 cups granulated sugar
Combine water and rhubarb in a pan. Bring to a boil and simmer 25 minutes. Strain out rhubarb, add sugar, and return to a boil for 2-3 minutes or until sugar is dissolved. Chill.
