Rum is complicated. Everyone knows that whiskeys can vary wildly in flavor, age, and quality, but most people think of rum as a clear spirit you had in college and didn't really bring with you into your adult life. Most of the rum you would have had at that time, the cheap, clear kind, was actually developed in the '60s to compete with vodka.
Vodka, you say? Yessir! Coming out of Prohibition, the two primary spirits of choice were bourbon and vodka. Everything else took the backburner. The companies who make that cheap rum actually make a lot of really, truly wonderful rums. But they had a problem. Vodka was stealing their business, so they took their rum, filtered it until it tasted like next-to-nothing, and put it in a bottle for the American market.
Over time, many Americans have come to associate that flavor with what rum is supposed to taste like, even to the point where most craft distilleries produce a white rum that doesn't have a lot going on. But rum can be so, so much more. We set out to make a very rich, flavor-forward rum and preach wildly that rum should shine in a cocktail, not take a back seat.

Complexity: Simple
Combine all ingredients in a shaker tin. Add ice. Shake well. Strain into a chilled cocktail class and garnish with a lime wheel.
Flavor Profile: Complex & Warming
Complexity: Intermediate
Combine all ingredients in a mixing glass. Add ice. Stir thoroughly. Strain into a chilled cocktail glass and garnish with an expressed orange peel.
Flavor Profile: Smooth & Refreshing
Complexity: Intermediate
Combine all ingredients in a shaker tin. Add ice. Shake vigorously. Fill a glass with crushed ice. Strain into glass and garnish with tropical accents (flowers, pineapple wedge, etc.)

Put all ingredients in a cocktail shaker and shake without ice for 30 seconds. Add ice and shake for 20 seconds more. Strain into a cocktail glass and garnish the foam with a few dashes of your favorite bitters.
