HOW TO DRINK GENEVER

THE SLURPEN

A slurpen is a traditional way to serve genever. A small tulip-shaped glass is placed in front of a patron and filled to the brim. The imbiber puts their hands behind their back and bows to the bar to slurp the top of the glass - picking it up would risk spilling it! After paying the proper respects to the bartender, the rest of the glass can be picked up.

THE KOPSTOOT

Similar to a slurpen, but with an added bonus - beer! Kopstoot (or Kopstootje) translates roughly as "little headbutt". The Kopstoot is the original boilermaker! A shot of genever is served alongside a small beer, usually a lighter beer like a lager or pilsner.

COCKTAILS

Genever works well in many cocktails, like our suggestions below. Four times as much genever was consumed in pre-Prohibition America than gin, so many classic gin cocktails were originally made with genever. If you have an old cocktail book and see gin, Dutch gin, or Holland gin listed, the author likely means genever.

When we started working on our genever, we quickly realized we could use some help. Enter the bartenders of Columbus.

We've been fortunate enough to get to know some of the most talented bartenders in the city. We reached out, explained genever-making, and waited. One by one, each of these individuals trickled into our distillery to show off what they had made. Each person presented a unique and exciting infusion.

We began blending and tasting until our palates were raw. We tore apart what we received and combined all the best elements to create Echo Spirits Genever. 

The names of everyone who helped us figure out how to make our genever are listed on the inside of every bottle of Echo Spirits Genever and always will be. This product, much like Echo Spirits itself, would be nothing if not for the community surrounding it.
